INGREDIENTS

  • 4 fresh salmon filets
  • 1 lemon
  • salt and pepper
  • 1/8 teaspoon garlic powder
  • dried basil, (to taste)
  • ½ cup shredded Parmesan cheese
  • 2 medium vine ripe tomatoes, sliced into 8 even slices
  • olive oil

INSTRUCTIONS

Preheat oven to 375°F. Line a rimmed baking sheet with foil, parchment paper or a silicone baking mat.

Pat salmon filets dry with a paper towel on both sides. Squeeze fresh lemon juice on top of each piece of fish. Then sprinkle with salt, pepper, garlic powder and basil, to taste.

Top each filet with 2 tablespoons fresh grated Parmesan cheese and then add 2 tomato slices on top. Drizzle olive oil on top of tomatoes and cheese. Then season tomatoes with salt and pepper, to taste.

Add 2 more tablespoons of Parmesan cheese on top of each piece of fish, over top of the tomatoes.

Place the baking sheet on a middle rack in the preheated oven and bake for 10-15 minutes or until the salmon flakes with a fork. The bake time will depend on how thick the salmon fillets are.

Optional – Broil for approximately 2-3 minutes or until cheese melts completely and the tomatoes begin to turn light golden brown on the edges.
