Steps To Make Cheesy Tomato Dip

1. Prepare The Tomatoes

Start by washing and drying the tomatoes. It is important that the tomatoes are completely dry so that the dip doesn’t become too watery.

Then cut the tomatoes in half. For extra large cherry tomatoes cut them in 4 sections.

Tip: To cut a lot of tomatoes at once, place the cherry tomatoes on a cutting board. Then place a large plate on top of them. Press down on the plate and run a knife, parallel to the cutting board & beneath the plate to cut the tomatoes through the center.

Once the tomatoes are cut, add them to a small baking dish. It is okay if they overlap each other in the dish.

2. Season The Tomatoes

Drizzle extra virgin olive oil over the tops of the tomatoes. Then season with salt and pepper to taste. Toss the mixture so that they are evenly coated.

3. Bake Time

Place the baking dish in the oven that has been preheated to 375°F (190°C). Let the tomatoes roast for 20 minutes or until they begin to blister and release some of their juices.

4. Add The Cheese

Once the tomatoes are roasted, take the baking dish out of the oven. Stir in the two varieties of cheese until well incorporated.

5. Bake To Heat The Cheese

Place the cheesy tomato dip back in the oven until the edges are hot and bubbly.

6. Stir & Serve

Once the dip comes out of the oven, give it one final stir. Then serve warm with crackers, pita chips, tortilla chips, toasted baguette slices or sliced veggies.

What Type Of Cheese To Use

There are two different varieties of cheese in this easy tomato dip recipe:

Boursin Cheese – Boursin cheese combines classic Gournay Cheese with various herbs and spices into a crumbly, yet spreadable cheese. You can use any flavor, however Garlic & Herb is the crowd favorite.

You can find Boursin cheese in a small, 5.2 ounce box. It is most often located in the speciality cheese section at the grocery store near the Feta cheese.

Shredded Cheddar Cheese – Although you can make this dip using only cherry tomatoes and Boursin cheese, the consistency is better when adding shredded Cheddar cheese to the mix as well.

Although shredding your own cheese is best, in this recipe it is okay to use pre-shredded, store bought cheese. However it is best to use finely shredded cheese as it melts better.

Preheat the oven to 375°F. Wash and dry the cherry tomatoes. *Be sure to dry them well.

Then slice them in half and place them in a small shallow baking dish. Drizzle a little olive oil over the top and season with salt and pepper to taste.

Place the dish in the oven and bake for 20 minutes or until soft and juicy. Remove the dish from the oven.

Cut the block of Boursin cheese into smaller sections and add it to the baking dish with the tomatoes. Stir well. Then add the finely shredded Cheddar cheese and stir until well incorporated.

Place the baking dish back in the oven and continue to bake for 5 minutes or until the cheese is melting. Take the dish out of the oven and stir to combine.

Serve warm with crackers, toasted baguette slices, pita chips or sliced veggies.
