Tuna Avocado Tomato Salad Recipe

INGREDIENTS

  • 2 ripe Avocados, diced
  • 1 cup cherry tomatoes, diced (about 8-10)
  • 1 can (5 oz.) tuna (albacore or chunk light tuna) in water, drained
  • 1 Tbsp. mayonnaise
  • 1/3 cup cilantro, fresh, chopped and divided
  • 3 Tbsp lime juice, divided
  • 1/4 cup red onion, finely diced
  • 1 small jalapeño pepper, seeded and diced
  • 1 tsp. garlic powder

For a quick and easy snack, appetizer or meal mix everything together in a bowl.

INSTRUCTIONS

Drain water from the can of tuna. In a small bowl combine the tuna, mayonnaise, 1 Tablespoon cilantro and 1 Tablespoon lime juice. Season with salt and pepper to taste. Set aside.

Place the diced avocado in a bowl and drizzle 1 Tablespoon of lime juice, and toss to coat. Set aside.

In a separate bowl, combine the diced tomatoes, onion, jalapeño, 1 Tablespoon lime juice and garlic powder. Stir to combine.

Assemble The Salad: Combine the tuna, avocado and the tomato mixture and stir gently to combine.

Or Make a Salad Stack: Divide each mixture into two. Then on two separate plates use a hamburger mold or large biscuit cutter and make a layer of the diced avocado.

Then layer half of the tuna on top and finally add the tomato mixture as the top layer.

Ingredients

  • 2 ea. ripe Avocados From Mexico, diced
  • 1 c. (about 8-10) NatureSweet® Cherub® tomatoes, diced
  • 1 can (5 oz.) tuna (albacore or yellowtail) in water, drained
  • 1 T. mayonnaise
  • 1/3 c. cilantro, fresh, chopped and divided
  • 3 T. lime juice, divided
  • 1/4 c. red onion, small dice
  • 1 ea. jalapeño pepper, seeded and diced
  • 1 tsp. garlic powder

Instructions
